Super Simple Avocado Salsa Verde

This is my favorite salsa to load up on at Mexican restaurants. It's part guac part salsa, and totally delicious. It blends up in seconds and is so easy, I've started making it every week!


The base of this recipe is tomatillos and avocado. Tomatillos look like unripe tomatoes. You may see them with their outer skins attached, or they may be sold already peeled, as shown in the photos below. While they look unripe, they are actually fully ripe in their green state. They are more sour than tomatoes and slightly less waters. They are easily found at Latin markets in the US.


Super Simple Avocado Salsa Verde

Ingredients


4-5 tomatillos (quartered)

1 avocado (quartered and peeled)

1/4 white onion (chunks)

1-2 cloves garlic

1 serrano chili

1/4 cup cilantro

juice of 1-3 limes

pinch salt


Add all your ingredients to a blender and process until smooth! Serve with chips and other salsas, on fish tacos or scrambled eggs! This will last in the fridge for only a few day, so make it fresh and enjoy it quickly!
